Jalapeno Peach Chicken (Print Version)

# Ingredients:

01 - 1/2 cup peach preserves.
02 - 1 tbsp olive oil.
03 - 1 tsp soy sauce.
04 - 1 tsp apple cider vinegar.
05 - 1 tsp Dijon mustard.
06 - 1/2 tsp minced garlic.
07 - 1/2 tsp kosher salt.
08 - 1/8 tsp black pepper.
09 - 1/8 tsp red pepper flakes.
10 - 2 lbs boneless skinless chicken thighs.
11 - 1 tsp kosher salt.
12 - 1/2 tsp black pepper.
13 - 1/2 tsp chili powder.
14 - 2 tbsp olive oil.
15 - 1 jalapeno pepper, sliced thin.
16 - 2 yellow peaches, pitted and sliced.

# Instructions:

01 - Mix all glaze ingredients in a bowl. Set aside.
02 - Pat chicken dry, season with salt, pepper, and chili powder.
03 - Heat oil in a large skillet over medium heat. Cook chicken 5 minutes per side until the internal temperature reaches 165°F.
04 - Remove chicken to a plate and tent with foil.
05 - Add jalapenos to the pan and cook for 3 minutes.
06 - Add peach slices and cook for 3 minutes until soft.
07 - Pour in the glaze and coat peaches and jalapenos.
08 - Return chicken to the pan and spoon glaze over the top.
09 - Cook for 1-2 minutes until hot. Serve.

01 - Perfect balance of sweet peaches and spicy jalapenos.
02 - Can adjust heat level by removing jalapeno seeds.
03 - Use ripe but firm peaches for best texture.
