Whisk egg yolks, milk, and vanilla together.

Mix in flour, baking powder, and salt.

Beat egg whites until frothy, add sugar, continue to stiff peaks.

Fold 1/3 whites into yolk mixture, then fold in remaining whites gently.

Scoop batter in mounds, add water, cover and cook 2 minutes. Add more batter, cook 5-6 minutes more.

Flip when golden, add water, cover and cook 4 minutes until done.
