01 - 2 lbs boneless, skinless chicken thighs

→ Sauce

02 - ½ cup soy sauce (or tamari)
03 - ¼ cup rice vinegar
04 - 2 tablespoons sesame oil
05 - 2 cloves garlic, minced
06 - 1 tablespoon fresh ginger, minced
07 - 1 tablespoon sugar-free sweetener
08 - ½ teaspoon red pepper flakes

→ Optional Garnish

09 - Sesame seeds
10 - Fresh cilantro

# Instructions:

01 - Place the chicken thighs in the crockpot.
02 - In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, garlic, ginger, sweetener, and red pepper flakes.
03 - Pour the sauce over the chicken in the crockpot.
04 - Cook on low for 4-6 hours until the chicken is tender.
05 - Shred the chicken and serve with extra sauce. Garnish with sesame seeds and cilantro if desired.
