Key Lime Bars (Print Version)

# Ingredients:

→ Crust

01 - 1 3/4 cup graham cracker crumbs
02 - 2 Tablespoons granulated sugar
03 - 1/2 cup (1 stick) unsalted butter, melted

→ Filling

04 - 6 oz cream cheese
05 - 1 (14 ounce) can sweetened condensed milk
06 - 4 egg yolks
07 - 1 Tablespoon lime zest
08 - 1/2 cup key lime juice

→ Topping

09 - 1/4 cup whipping cream
10 - 1 teaspoon confectioners sugar
11 - 2 teaspoons lime zest

# Instructions:

01 - Preheat the oven to 325°F and line an 8x8 inch pan with foil and grease lightly.
02 - Mix together the graham crumbs, sugar and melted butter and press into the bottom of prepared pan. Bake for 10 minutes.
03 - Beat cream cheese in a medium bowl until soft. Add condensed milk and beat until smooth.
04 - Mix in egg yolks one at a time.
05 - Stir in lime zest and lime juice.
06 - Pour filling into crust and bake for about 30 minutes. Allow to cool to room temperature, then chill in the fridge for at least 2 hours.
07 - Whip the cream with the powdered sugar until stiff and top each bar with whipped cream and lime zest.

# Notes:

01 - These bars have a creamy, tangy lime filling with a sweet graham cracker crust.
02 - You can use regular lime juice if key limes aren't available, but the flavor will be slightly different.
