Lamb Ragu with Pappardelle (Print Version)

# Ingredients:

01 - 2 pounds ground lamb.
02 - 3 tablespoons olive oil.
03 - 1 brown onion.
04 - 1 celery stalk.
05 - 1 carrot.
06 - 3 tablespoons tomato paste.
07 - 1 1/2 cups red wine.
08 - 2 bay leaves.
09 - 2 rosemary sprigs.
10 - 4 thyme sprigs.
11 - 4 cups chicken stock.
12 - 28 ounces diced tomatoes.
13 - 7 ounces pappardelle pasta.
14 - Parmesan for serving.

# Instructions:

01 - Cook lamb in oil until browned.
02 - Add onion, celery, carrot until soft.
03 - Stir in paste and seasonings. Cook 5 minutes.
04 - Pour in wine, stock, tomatoes with herbs.
05 - Cook 2-2.5 hours until thick.
06 - Serve over cooked pasta with parmesan.
