In a large bowl, gently mix ground beef with Italian seasoning until just combined. Form into 2 large patties and season both sides with salt and pepper. Make a small indent in the center to prevent puffing while cooking.

In a small bowl, mix softened butter with Italian seasoning and garlic powder until well combined. Set aside for brushing the buns.

Preheat grill to high heat with the lid closed. Once hot, reduce to medium-high heat for cooking the patties.

Place seasoned patties on the grill and cook for 3 minutes per side for medium doneness, or until they reach your desired internal temperature. Don't press down on the patties while cooking.

While burgers cook, spread garlic herb butter on the cut sides of both bun halves. Place cut-side down on the grill until golden with grill marks, about 1-2 minutes. Remove and set aside.

Place bottom buns on plates. Add a spoonful of marinara sauce, then the cooked burger patty, dollops of ricotta cheese, more marinara sauce, and a generous amount of mozzarella cheese. Repeat the layering once more if desired.

To melt the cheese, either place assembled burgers under the broiler for 1-2 minutes, or turn off one side of the grill, place burgers on foil on the cooler side, and close the lid until cheese melts. Top with upper bun and serve immediately.
