Turkey Leftover Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 medium onion, diced.
03 - 2 carrots, diced.
04 - 2 celery stalks, diced.
05 - 3 cloves garlic, minced.
06 - 6 cups turkey or chicken broth.
07 - 2 cups cooked turkey, shredded.
08 - 1 teaspoon dried thyme.
09 - 1 teaspoon dried rosemary.
10 - Salt and pepper to taste.
11 - 2 cups fresh spinach or kale.
12 - 1 cup frozen peas.
13 - 1 lemon, juiced.

# Instructions:

01 - Heat oil in large pot over medium heat.
02 - Cook onion, carrots, celery until soft, 5-7 minutes.
03 - Add garlic, cook 1-2 minutes until fragrant.
04 - Pour in broth, stir well.
05 - Add turkey, thyme, rosemary, salt, pepper.
06 - Simmer 20 minutes.
07 - Taste, adjust seasonings.
08 - Add spinach/kale, let wilt.
09 - Add peas, cook 5 minutes.
10 - Serve hot with lemon juice.
