Lemon Meltaway Cookies (Print Version)

# Ingredients:

01 - 1 cup (2 sticks) unsalted butter, room temperature.
02 - 3/4 cup granulated white sugar.
03 - 1 large egg.
04 - Zest of one medium lemon.
05 - 1/2 teaspoon baking powder.
06 - 1/4 teaspoon salt.
07 - 2 cups all-purpose flour.
08 - 2 cups confectioners' sugar.
09 - 3 tablespoons fresh lemon juice.

# Instructions:

01 - Heat oven to 375°F and line baking sheets with parchment.
02 - Cream butter and sugar until light and fluffy, about 1 minute.
03 - Mix in egg and lemon zest for 30 seconds.
04 - Mix in baking powder, salt, then gradually add flour until combined.
05 - Scoop tablespoon-sized balls, place 1 inch apart and flatten with glass.
06 - Bake 8-10 minutes, rotating halfway through.
07 - Cool 5 minutes on sheets, then transfer to wire racks.
08 - Mix confectioners' sugar and lemon juice, spread on cooled cookies.
