Lemon Turmeric Lentil Soup (Print Version)

# Ingredients:

01 - 2 cups (340g) brown or green lentils, picked and rinsed.
02 - 2 tablespoons olive oil.
03 - 2 cups onion, finely chopped.
04 - 1 1/2 cups carrot, chopped.
05 - 2 teaspoons garlic, minced.
06 - 1 teaspoon ground cumin.
07 - 1/2 teaspoon ground coriander.
08 - 1/2 teaspoon ground turmeric.
09 - 1/2 teaspoon black pepper, freshly ground.
10 - 8 cups chicken or vegetable broth.
11 - 2 cups kale or spinach, shredded.
12 - 1-2 lemons.
13 - 1/4 cup fresh parsley or dill, chopped.
14 - Sea salt to taste.

# Instructions:

01 - Heat oil in large pot. Cook onions and carrots with salt until soft and sweet, 5-7 minutes.
02 - Stir in garlic, cumin, coriander, pepper, and turmeric. Cook 30 seconds.
03 - Add lentils and broth. Bring to boil, then simmer partially covered 35-40 minutes until lentils are tender.
04 - Stir in kale or spinach and cook uncovered 5 minutes.
05 - Remove from heat. Add lemon juice and herbs. Season to taste with salt and additional lemon.

# Notes:

01 - Can blend if smoother consistency desired.
02 - Can add sausage or ham for extra flavor.
03 - Lemon slices are for flavor, not eating.
