Libby's Pumpkin Bars (Print Version)

# Ingredients:

01 - 15 oz can Libby’s Pumpkin Puree.
02 - 2 cups All-Purpose Flour.
03 - 1 ½ cups White Sugar.
04 - 1 cup Butter (softened).
05 - 4 Large Eggs.
06 - 1 tsp Baking Soda.
07 - 2 tsp Baking Powder.
08 - 2 tsp Ground Cinnamon.
09 - 1 tsp Pumpkin Pie Spice.
10 - ½ tsp Salt.
11 - For the Cream Cheese Frosting:.
12 - 5 cups Confectioners' Sugar.
13 - 8 oz Cream Cheese (softened).
14 - ¼ cup Butter (softened).
15 - 1 tsp Pure Vanilla Extract.

# Instructions:

01 - Preheat oven to 350°F (175°C). Line a 12"x17" baking pan with parchment paper and spray the sides with cooking spray.
02 - In a large bowl, cream together softened butter and white sugar until smooth. Add eggs and mix well.
03 - Sift together the flour, cinnamon, baking soda, baking powder, salt, and pumpkin pie spice. Gradually add dry ingredients to the butter mixture.
04 - Stir in the pumpkin puree until the batter is smooth.
05 - Pour the batter into the prepared pan. Bake for 20-25 minutes or until a toothpick comes out clean.
06 - While the bars bake, make the cream cheese frosting. In a mixer, blend together softened cream cheese, butter, and vanilla extract.
07 - Gradually add powdered sugar and mix until smooth. If frosting is too thick, add 1 tbsp milk at a time.
08 - Once the bars are fully cooled, spread the frosting evenly over the top.
09 - Slice and serve! Store in an airtight container in the fridge for up to 5 days.
