Linzer Cookies (Print Version)

# Ingredients:

01 - 1 cup unsalted butter, room temperature for 10 minutes.
02 - 1 cup granulated sugar.
03 - 1/4 teaspoon salt.
04 - 2 large eggs.
05 - 1 teaspoon vanilla.
06 - 1/4 teaspoon almond extract.
07 - 3 cups all purpose flour.
08 - 1-2 cups raspberry or strawberry jam.
09 - 1 cup powdered sugar for topping.

# Instructions:

01 - Cream butter, sugar, and salt until light and fluffy using stand mixer with paddle attachment.
02 - Mix in eggs, vanilla, and almond extract until combined.
03 - Mix in flour on low speed until just combined, avoid overmixing.
04 - Roll dough between parchment paper to 1/8 inch thickness.
05 - Refrigerate rolled dough for 20 minutes until firm.
06 - Cut half plain circles and half with heart cutouts in center.
07 - Freeze cut cookies 3-5 minutes before baking.
08 - Bake at 350°F for 8-10 minutes until edges are set but not brown.
09 - Dust cutout tops with sugar, spread jam on bottom cookies, and sandwich together.

01 - Don't let edges brown for best texture.
02 - Dust with sugar before assembly.
03 - Can use various jam flavors.
