Heat oven to 450°F and oil a baking sheet.

Boil potatoes in salted water for 15 minutes until tender, then drain and cool slightly.

Place potatoes on baking sheet and smash each with a measuring cup. Brush with olive oil, add salt and pepper.

Bake 25-30 minutes until golden and crispy.

Top with cheese and bake 2-3 minutes more.

Cook bacon in skillet until crispy, about 6-8 minutes.

Add sour cream, bacon, and chives on top.
