Crispy Smashed Potatoes (Print Version)

# Ingredients:

01 - 2 pounds baby yellow potatoes.
02 - Kosher salt and black pepper to taste.
03 - 2 tablespoons olive oil.
04 - 3/4 cup shredded cheddar cheese.
05 - 1/3 cup sour cream.
06 - 4 slices bacon, diced.
07 - 2 tablespoons chopped fresh chives.

# Instructions:

01 - Heat oven to 450°F and oil a baking sheet.
02 - Boil potatoes in salted water for 15 minutes until tender, then drain and cool slightly.
03 - Place potatoes on baking sheet and smash each with a measuring cup. Brush with olive oil, add salt and pepper.
04 - Bake 25-30 minutes until golden and crispy.
05 - Top with cheese and bake 2-3 minutes more.
06 - Cook bacon in skillet until crispy, about 6-8 minutes.
07 - Add sour cream, bacon, and chives on top.
08 - Serve hot.

# Notes:

01 - These smashed potatoes make great party food. You can boil the potatoes ahead of time, then smash and bake them just before guests arrive.
