Mac and Cheese Soup (Print Version)

# Ingredients:

01 - 5 cups vegetable or chicken broth.
02 - 1 cup elbow macaroni, uncooked.
03 - 1/3 cup unsalted butter.
04 - 1/4 cup all-purpose flour.
05 - 1½ cups milk.
06 - 2 cups sharp yellow cheddar cheese, grated.
07 - 1/3 cup Parmesan cheese, grated.
08 - ¼ cup mozzarella cheese, grated.
09 - 1 teaspoon garlic powder.
10 - ½ tablespoon mustard powder.
11 - Green onions for garnish.
12 - Black pepper for garnish.

# Instructions:

01 - Boil broth, add macaroni and cook until al dente, 8-10 minutes.
02 - Melt butter, whisk in flour 1-2 minutes until smooth.
03 - Gradually whisk in milk until smooth. Add cheeses and seasonings, stir until melted.
04 - Pour cheese mixture into pasta and broth, mix well.
05 - Garnish with green onions and pepper.

# Notes:

01 - Does not freeze well.
02 - Reheat gently to avoid soggy pasta.
