Christmas Maraschino Cherry Shortbread Cookies (Print Version)

# Ingredients:

01 - 1 cup unsalted butter, room temperature.
02 - ½ cup powdered sugar.
03 - ½ tablespoon vanilla extract.
04 - 2 cups all-purpose flour.
05 - ½ teaspoon salt.
06 - ¾ cup maraschino cherries, chopped and drained.
07 - ⅔ cup chocolate chips.

# Instructions:

01 - Mix flour and salt in a bowl and set aside.
02 - Beat butter and powdered sugar until fluffy. Add vanilla.
03 - Gradually add flour mixture until large clumps form.
04 - Fold in chocolate chips and drained cherries.
05 - Form into 2-inch thick log, wrap and refrigerate 1-2 hours.
06 - Slice chilled dough ¼-⅓ inch thick, bake at 325°F for 10-15 minutes.

# Notes:

01 - Drain cherries well.
02 - Chill dough thoroughly.
03 - Press crumbled slices back together.
