# Ingredients:

→ Vegetables

01 - 2 large cucumbers, thinly sliced
02 - 3 medium tomatoes, chopped or sliced
03 - 1 large red onion, thinly sliced

→ Marinade

04 - 1/4 cup white or apple cider vinegar
05 - 2 tablespoons olive oil
06 - 1 tablespoon sugar (adjust to taste)
07 - 1 teaspoon salt
08 - 1/2 teaspoon black pepper
09 - 1 teaspoon dried oregano or fresh herbs (dill, parsley, basil)

→ Optional Additions

10 - Crushed red pepper (optional)
11 - Garlic (optional)
12 - Feta cheese (optional)

# Instructions:

01 - Slice cucumbers and onions thinly. Chop or slice tomatoes. Place all vegetables in a large bowl.
02 - In a separate bowl or jar, whisk together vinegar, olive oil, sugar, salt, pepper, and herbs until well combined.
03 - Pour marinade over vegetables and toss well to coat everything evenly.
04 - Cover and refrigerate for 1-2 hours, or overnight for best flavor development.
