Marry Me Chickpeas (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 5 cloves fresh garlic, minced.
03 - ½ cup chopped sundried tomatoes.
04 - ½ teaspoon dried oregano.
05 - ½ teaspoon red chili flakes.
06 - 1 teaspoon salt.
07 - ¼ teaspoon black pepper.
08 - 2 cans (15 oz each) chickpeas, drained and rinsed.
09 - 1 cup vegetable broth.
10 - 1 tablespoon tomato paste.
11 - 1 cup vegan cream.
12 - 2 cups fresh baby spinach.
13 - 4-5 fresh basil leaves, chopped.
14 - ½ cup vegan parmesan (optional).

# Instructions:

01 - Heat oil in a large pan over low-medium heat and cook garlic until fragrant, about 1-2 minutes.
02 - Mix in sundried tomatoes, oregano, chili flakes, salt and pepper and cook for 1 minute.
03 - Add chickpeas, broth, tomato paste, cream and spinach, stirring well.
04 - Cook everything for about 5 minutes until warm and spinach wilts.
05 - Taste and add more salt, pepper or chili flakes if needed.
06 - Take off heat and stir in fresh basil and vegan parmesan if using.

# Notes:

01 - Can use chickpeas, vegan chicken or tofu.
02 - Make cashew cream by soaking ¾ cup cashews and blending with water.
03 - Add cornstarch mix to thicken if using store-bought cream.
