Potato Cheese Bombs (Print Version)

# Ingredients:

01 - 1 box instant mashed potatoes (6 servings).
02 - 1 cup shredded sharp cheddar cheese.
03 - 3/4 cup sour cream.
04 - 1 teaspoon black pepper.
05 - 1 teaspoon paprika.
06 - 2 tablespoons melted butter.
07 - 1 pinch salt.
08 - 1 whole egg plus 1 egg yolk.

# Instructions:

01 - Prepare instant potatoes per package using only water and butter. Cool slightly.
02 - Mix in cheese, sour cream, and pepper. Cool to room temp. Add salt to taste.
03 - Whisk egg and yolk, fold into cooled potatoes.
04 - Transfer to piping bag or Ziploc with corner snipped.
05 - Oil mini muffin tin. Pipe potato mixture in layers.
06 - Mix melted butter with paprika, brush on tops.
07 - Bake at 350°F for 30 minutes. Broil 2 minutes until golden.
08 - Cool 15-20 minutes before removing.

# Notes:

01 - Let mixture cool before adding eggs.
02 - Can prep ahead and bake later.
03 - Spray tin well to prevent sticking.
04 - Add garlic powder for extra flavor.
05 - Reheat in oven not microwave.
