Mediterranean Chicken Meatballs (Print Version)

# Ingredients:

→ Base

01 - 1 pound ground chicken or turkey
02 - ¼ cup whole wheat panko breadcrumbs
03 - 1 large egg

→ Cheese & Aromatics

04 - ⅓ cup sun dried tomatoes in oil, chopped
05 - ¼ cup feta cheese
06 - ¼ cup parmesan cheese
07 - 2 cloves garlic, minced
08 - ¼ cup chopped green onions
09 - 2 tablespoons chopped fresh parsley

→ Seasonings

10 - ½ teaspoon salt
11 - ½ teaspoon black pepper
12 - Lemon juice (optional)

# Instructions:

01 - Preheat oven to 400°F. Line baking sheet with parchment paper or spray with nonstick spray
02 - Combine all ingredients except lemon juice in a large bowl. Mix thoroughly using hands or spoon
03 - Using a 1.2 tablespoon scoop, form 2-inch meatballs and place on prepared baking sheet
04 - Bake for 20-25 minutes until lightly browned and cooked through
05 - Optional: squeeze lemon juice over meatballs before serving
