Sopa de Conchas (Print Version)

# Ingredients:

01 - 14 ounces chopped tomatoes.
02 - 9 ounces shell pasta.
03 - ½ onion.
04 - 4½ cups vegetable stock.
05 - Salt and pepper to taste.
06 - Fresh cilantro for garnish.

# Instructions:

01 - Chop tomatoes and onion. Blend together in food processor until saucy.
02 - Cook shell pasta in oil until golden, being careful not to burn.
03 - Add tomato mixture, simmer 5-7 minutes. Add broth and cook until pasta is al dente.
04 - Garnish with fresh cilantro.

# Notes:

01 - Can add nutritional yeast for cheesy flavor.
02 - Add chili oil for heat.
