Mini Strawberry Crunch Cheesecake Bites (Print Version)

# Ingredients:

01 - 1 cup graham cracker crumbs.
02 - 1/4 cup granulated sugar.
03 - 1/3 cup unsalted butter, melted.
04 - 8 ounces cream cheese, softened.
05 - 1/2 cup granulated sugar.
06 - 1 teaspoon vanilla extract.
07 - 1 large egg.
08 - 1/2 cup sour cream.
09 - 1 cup fresh strawberries, diced.
10 - 1/4 cup granulated sugar.
11 - 1 tablespoon lemon juice.
12 - 1/2 teaspoon cornstarch.
13 - 1/2 cup crushed strawberry cereal.
14 - 2 tablespoons melted butter.

# Instructions:

01 - Heat oven to 325°F. Mix crust ingredients and press into mini cheesecake pans. Bake 5-7 minutes.
02 - Beat cream cheese, sugar, vanilla. Add egg and sour cream until smooth.
03 - Fill cups 3/4 full. Bake 18-20 minutes until edges set but centers slightly jiggly.
04 - Cook strawberries, sugar, lemon juice and cornstarch until softened. Mix cereal with butter.
05 - Once chilled, top cheesecakes with strawberry mixture and crunch topping.

# Notes:

01 - Chill at least 2 hours before topping.
02 - Add toppings just before serving for best texture.
