Caramelized Mushroom Grilled Cheese (Print Version)

# Ingredients:

→ Mushroom Filling

01 - 1 tablespoon butter
02 - 1 tablespoon olive oil
03 - 8 ounces cremini mushrooms, sliced
04 - 1 small onion, sliced
05 - 1 clove garlic, chopped
06 - 1 teaspoon fresh thyme, chopped
07 - 1/4 cup white wine or broth
08 - 1 tablespoon fresh parsley, chopped
09 - 1/2 teaspoon truffle oil (optional)

→ Sandwich Assembly

10 - 1 cup fontina cheese, shredded
11 - 1/4 cup parmigiano reggiano, grated
12 - 2 tablespoons salted butter, room temperature
13 - 4 slices bread

# Instructions:

01 - Melt butter with oil over medium heat. Add mushrooms and onion, cooking until golden brown and caramelized, about 10-15 minutes.
02 - Stir in garlic and thyme, cooking until fragrant, about 1 minute.
03 - Add wine or broth, scraping up brown bits. Cook until liquid mostly evaporates, 2-3 minutes.
04 - Season with salt and pepper, stir in parsley, and let cool slightly. Mix in both cheeses.
05 - Butter one side of each bread slice. Place two slices buttered side down, top with mushroom mixture, and cover with remaining bread, buttered side up.
06 - Cook in preheated pan over medium heat until golden brown and cheese melts, about 2-4 minutes per side.
