One-Pan Lemon Orzo and Salmon (Print Version)

# Ingredients:

→ Salmon & Seasonings

01 - 4 salmon fillets
02 - 1 tablespoon olive oil
03 - 1 teaspoon paprika
04 - 1 teaspoon dry parsley
05 - ½ teaspoon garlic powder
06 - ¼ teaspoon smoked paprika
07 - Salt and pepper to taste

→ Orzo Base

08 - 1 cup dry orzo
09 - 2 cups shredded kale
10 - 1 cup frozen peas
11 - 2 cups low-sodium vegetable broth or water
12 - 1 cup full-fat coconut milk
13 - 1 tablespoon butter (dairy or plant-based)

→ Aromatics & Seasonings

14 - 2 shallots, diced
15 - 2 cloves garlic, crushed
16 - Juice of ½ lemon
17 - 1 tablespoon lemon zest
18 - ½ teaspoon salt, plus more to taste
19 - ½ teaspoon black pepper
20 - ¼ teaspoon chili flakes
21 - Fresh parsley for garnish

# Instructions:

01 - Combine salmon seasonings and rub over fillets
02 - Heat olive oil in large skillet. Sear salmon 3-4 minutes per side until browned. Remove from pan
03 - In same pan, melt butter and cook shallots and garlic for 2 minutes. Add orzo and seasonings
04 - Add broth, coconut milk, peas, and kale. Cover and bring to boil, then simmer 10-12 minutes, stirring occasionally
05 - Add lemon juice and return salmon to pan. Cover and cook 5-6 minutes more. Garnish with parsley

01 - Can use dairy or plant-based butter
02 - Stir orzo frequently to prevent sticking
