Onion Gruyere Tarts (Print Version)

# Ingredients:

01 - 1 sheet thawed puff pastry.
02 - 1 yellow onion, cut into thin rings.
03 - 3 tablespoons honey, divided.
04 - 2 sprigs fresh thyme.
05 - Sea salt to taste.
06 - Black pepper to taste.
07 - 18 thin slices gruyere cheese.
08 - 1 large egg for washing.

# Instructions:

01 - Heat oven to 400°F. Cover a baking sheet with parchment paper.
02 - Make 9 small pools of honey on the parchment paper. Cut pastry into 9 even squares.
03 - Add thyme, salt and pepper over honey. Layer one onion slice and two cheese pieces on each honey pool.
04 - Place a pastry square on each stack. Brush tops with beaten egg.
05 - Place in oven for 20 minutes until golden brown and puffy.
06 - Flip tarts over carefully. Top with extra honey and thyme. Let cool for 5 minutes before serving.
