Peach Pound Twinkies (Print Version)

# Ingredients:

01 - 1 1/2 cups all-purpose flour.
02 - 1 teaspoon baking powder.
03 - 1/4 teaspoon salt.
04 - 1 cup granulated sugar.
05 - 1/2 cup unsalted butter, softened.
06 - 2 large eggs.
07 - 1 teaspoon vanilla extract.
08 - 1/2 cup whole milk.
09 - 2 cups fresh peaches, peeled and diced.
10 - 1/4 cup granulated sugar.
11 - 1 tablespoon cornstarch.
12 - 1 tablespoon lemon juice.
13 - 1 cup powdered sugar.
14 - 2 tablespoons heavy cream or milk.
15 - 1 teaspoon vanilla extract.

# Instructions:

01 - Heat oven to 350°F. Grease Twinkie pan.
02 - Mix flour, baking powder and salt.
03 - Cream butter and sugar. Beat in eggs and vanilla.
04 - Alternate adding dry ingredients and milk. Fill pan 3/4 full.
05 - Bake 18-22 minutes. Cool completely.
06 - Cook peaches, sugar, cornstarch and lemon juice until thick. Cool.
07 - Hollow out cakes and fill with peach mixture.
08 - Mix glaze ingredients and drizzle over cakes.

# Notes:

01 - Can use canned peaches.
02 - Mini loaf pans work too.
03 - Cool filling before using.
04 - Can freeze unfilled cakes.
05 - Fill just before serving.
