01 -
Preheat your oven to 350 degrees.
02 -
Take a knife and chop up the peaches right in the cans of pie filling. Just use a sawing back and forth motion to cut them into smaller pieces. Set aside.
03 -
In a large bowl, cream together the softened butter, sugar, and salt until light and fluffy. You can use an electric hand mixer or a stand mixer.
04 -
Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
05 -
Gradually add the flour one cup at a time, mixing on medium speed until combined.
06 -
Spread about 3 cups of the dough into a greased 15x10x1 inch baking pan, pressing it evenly across the bottom.
07 -
Spread the chopped peach pie filling evenly over the dough.
08 -
Drop the remaining dough by teaspoonfuls over the peach filling. It doesn't need to cover completely - just dollop it around.
09 -
Bake on the middle rack for 30 to 35 minutes, or until golden brown. Let cool completely in the pan on a wire rack.
10 -
Once the bars are cool, make the icing. In a small bowl, mix together the powdered sugar, vanilla extract, almond extract if using, and 2 to 3 tablespoons of milk. Start with a little milk and add more until you reach your desired drizzling consistency.
11 -
Drizzle the glaze over the bars just before serving. These are like peach pie you can eat with your hands!
