Peanut Butter and Jelly Sloppy Joes (Print Version)

Classic sloppy joes get a sweet twist with grape jelly, tangy BBQ sauce and a warm peanut butter drizzle, ready in about 35 minutes.

# Ingredients:

→ For the sloppy joe meat

01 - 1 tablespoon neutral oil (vegetable or canola)
02 - 1 small yellow onion, diced
03 - 2 cloves garlic, minced
04 - 1 lb (450 g) lean ground beef
05 - 1/2 cup (120 g) ketchup
06 - 1/4 cup (75 g) grape jelly
07 - 2 tablespoons BBQ sauce
08 - 1 tablespoon Worcestershire sauce
09 - 1/2 teaspoon smoked paprika
10 - Salt and black pepper, to taste

→ For the peanut drizzle

11 - 1/3 cup (85 g) creamy peanut butter
12 - 2-3 tablespoons warm water
13 - 1 tablespoon rice vinegar
14 - 1 teaspoon soy sauce
15 - 1/2 teaspoon hot sauce (optional)

→ To serve

16 - 4 brioche or soft burger buns, split
17 - 2 tablespoons chopped roasted peanuts (optional)
18 - Sliced dill pickles (optional)

# Instructions:

01 - Heat the oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until it turns soft and translucent, then stir in the garlic for 30 seconds until fragrant.
02 - Add the ground beef to the skillet, breaking it up with a spoon. Cook for 6 to 8 minutes, stirring occasionally, until no pink remains and a thermometer inserted into the meat reads 160°F. Drain off any excess fat.
03 - Stir in the ketchup, grape jelly, BBQ sauce, Worcestershire sauce, smoked paprika, salt, and pepper. Lower the heat and simmer for 8 to 10 minutes, stirring now and then, until the sauce thickens and clings to the meat.
04 - While the meat simmers, whisk the peanut butter with 2 tablespoons of warm water, the rice vinegar, soy sauce, and hot sauce if using. Add more water a teaspoon at a time until the sauce pours in a smooth ribbon.
05 - Split the buns and toast them cut-side down in a dry skillet or under the broiler for 1 to 2 minutes until golden and crisp at the edges.
06 - Spoon the warm meat mixture onto the bottom buns, drizzle generously with the peanut sauce, and scatter chopped peanuts and pickles on top if using. Close with the top bun and serve right away.

# Notes:

01 - Best served right away while the bun is toasted and the sauce is warm.
02 - Doubles easily for a crowd; make the peanut drizzle in two batches so it stays pourable.
