Boil lasagna noodles in a large pot until tender, but be careful not to overcook or they'll fall apart during assembly. Drain and set aside.

Preheat oven to 350°F. Lightly spray a 13×9 inch glass baking dish with cooking spray. Spread an even layer of pizza sauce in the bottom of the dish.

In a medium bowl, combine ricotta cheese, onion powder, garlic powder, and Italian seasoning. Mix until smooth.

Lay lasagna noodles out on a large cutting board or baking sheet. Use a small cookie scoop to place 1 scoop of ricotta mixture onto each noodle, then spread evenly using an offset spatula or spoon. Lay 8-10 pepperoni slices along the length of each noodle on top of the ricotta.

Carefully roll up each noodle tightly and place seam side down in the prepared baking dish. Pour remaining pizza sauce over the rolls, then sprinkle with shredded mozzarella cheese.

Bake for 15-20 minutes until cheese is completely melted and bubbly with a light golden brown color. Garnish with fresh parsley or additional Italian seasoning if desired before serving.
