Place roast on wire rack on baking sheet. Refrigerate uncovered 1 hour to overnight.

Heat oven to 450°F.

Mix oil, garlic, rosemary, thyme, salt, pepper.

Rub mixture all over roast.

Place on roasting rack in roasting pan.

Roast 15 minutes at 450°F.

Reduce to 325°F.

Roast 1 hour 45 minutes for medium, 2 hours for medium well.

Rest 15-30 minutes before slicing.
