Perfect Roast Beef (Print Version)

# Ingredients:

01 - 4 lb round roast.
02 - 1/4 cup extra-virgin olive oil.
03 - 3 cloves garlic, finely chopped.
04 - 1 tbsp fresh rosemary, chopped.
05 - 1 tbsp fresh thyme leaves, chopped.
06 - 4 tsp kosher salt.
07 - 1 tsp freshly ground black pepper.

# Instructions:

01 - Place roast on wire rack on baking sheet. Refrigerate uncovered 1 hour to overnight.
02 - Heat oven to 450°F.
03 - Mix oil, garlic, rosemary, thyme, salt, pepper.
04 - Rub mixture all over roast.
05 - Place on roasting rack in roasting pan.
06 - Roast 15 minutes at 450°F.
07 - Reduce to 325°F.
08 - Roast 1 hour 45 minutes for medium, 2 hours for medium well.
09 - Rest 15-30 minutes before slicing.
