Heat olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Season with salt and pepper. Remove beef from the skillet and set aside.

In the same skillet, add sliced onion, bell pepper, and mushrooms. Cook until vegetables are tender, about 5 minutes.

Return the beef to the skillet with the vegetables. Mix well and heat through.

Lay out tortillas and sprinkle with shredded provolone and mozzarella cheese in the center of each.

Spoon the beef and vegetable mixture evenly onto the cheese on each tortilla.

Fold the sides of the tortilla over the filling, then roll up tightly. Heat a grill pan or skillet over medium heat and cook each wrap for 2-3 minutes per side, or until the tortilla is crispy and the cheese is melted.
