Pignoli Cookies (Print Version)

# Ingredients:

01 - 7 ounces (198g) almond paste.
02 - 1/2 cup (100g) granulated sugar.
03 - 1 large egg white.
04 - 1/4 teaspoon kosher salt.
05 - 1 cup (140g) pine nuts.

# Instructions:

01 - Preheat oven to 350°F. Line baking sheet with parchment.
02 - Process almond paste, sugar, egg white and salt until smooth, about 1 minute. Scrape bowl halfway.
03 - Scoop 12 tablespoons dough (25g each), roll into balls. Chill if too sticky.
04 - Roll dough balls in pine nuts, pressing gently to adhere.
05 - Space 2 inches apart. Bake 18 minutes until edges and nuts are golden.
06 - Let cool completely on pan before serving.

# Notes:

01 - Use almond paste, not marzipan.
02 - Can use stand mixer instead of processor.
03 - Let cool fully to prevent breaking.
