Pineapple Chipotle Salmon (Print Version)

# Ingredients:

01 - 1 lb salmon fillet
02 - 1 cup pineapple juice
03 - 2 tbsp chipotle peppers in adobo, minced
04 - 1/4 cup honey
05 - 2 tbsp soy sauce
06 - 1 tbsp lime juice
07 - 1 tsp garlic powder
08 - 1/2 tsp salt
09 - 1/4 tsp black pepper
10 - 1 tbsp olive oil

# Instructions:

01 - Preheat oven to 400°F (200°C).
02 - In a saucepan, combine pineapple juice, minced chipotle peppers in adobo, honey, soy sauce, lime juice, garlic powder, salt, and black pepper. Bring to a simmer over medium heat and cook for about 10 minutes, stirring occasionally, until the mixture has thickened to a glaze consistency.
03 - While the glaze is simmering, pat the salmon fillet dry with paper towels. Season lightly with additional salt and pepper if desired.
04 - Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, place the salmon in the skillet skin-side down and sear for 3 minutes until the skin is crispy.
05 - Brush the top and sides of the salmon generously with the prepared pineapple chipotle glaze. Transfer the skillet to the preheated oven and bake for 8-10 minutes, depending on the thickness of your fillet, until the salmon is just cooked through but still moist.
06 - Remove from the oven and let rest for a minute or two. Serve the salmon with additional glaze drizzled over the top.

# Notes:

01 - The internal temperature of properly cooked salmon should reach 145°F (63°C).
02 - You can adjust the amount of chipotle peppers to control the spice level.
03 - This glaze can be made ahead of time and stored in the refrigerator for up to a week.
04 - If you don't have an oven-safe skillet, you can transfer the seared salmon to a baking dish for the oven step.
