Pineapple Spiral Ham (Print Version)

# Ingredients:

01 - 1 spiral-sliced city ham (6-9 pounds).
02 - 1 cup dark brown sugar, packed.
03 - 12 ounces cola or Dr. Pepper.
04 - 2 tablespoons apple cider vinegar.
05 - 1 tablespoon low-sodium soy sauce.
06 - 1½ tablespoons Dijon mustard.
07 - 1½ tablespoons grainy mustard.
08 - 1 teaspoon ground ginger.
09 - ½ teaspoon onion powder.
10 - ¼ teaspoon crushed red pepper flakes.
11 - ¼ teaspoon kosher salt.
12 - 20 ounces crushed pineapple (1 large can).

# Instructions:

01 - Mix glaze ingredients in a saucepan. Boil over medium heat, then simmer 20-30 minutes until syrupy.
02 - Heat oven to 325°F.
03 - Score ham surface with ½-inch-deep cuts, spaced 1 inch apart. Cover and bake 1 hour.
04 - Brush half the glaze over ham, spreading into cuts.
05 - Add crushed pineapple, pressing into cuts, then pour half remaining glaze over top.
06 - Bake uncovered 15 minutes.
07 - Keep cooking and basting every 10 minutes with pan drippings until ham reaches 140°F (about 40-60 minutes total).

# Notes:

01 - Use only canned pineapple - fresh will make the ham mushy.
02 - Keeps in fridge 4 days or freezer 2 months.
