Pizza Enchiladas (Print Version)

Flour tortillas filled with Italian sausage, peppers, onions, pepperoni, and mozzarella, rolled up and topped with pizza sauce, cheese, and mini pepperonis, baked until bubbly.

# Ingredients:

→ For the Filling

01 - 1 lb Italian sausage
02 - 1/2 red onion, diced
03 - 1 green bell pepper, diced
04 - 2.25 oz can black olives, drained
05 - 1/2 cup chopped pepperoni slices
06 - 14 oz jar pizza sauce (divided)
07 - 1 to 2 teaspoons Italian seasoning

→ For Assembly

08 - 8 taco or burrito size flour tortillas
09 - 16 oz freshly shredded mozzarella cheese (divided)
10 - 5 oz mini pepperonis

# Instructions:

01 - Preheat your oven to 400 degrees (200°C) and grease a 9x13 inch baking dish.
02 - In a large skillet over medium heat, cook the Italian sausage with the diced onions, bell peppers, black olives, and chopped pepperoni until the sausage is browned and fully cooked. Drain the grease if needed.
03 - Stir in 1/2 cup of the pizza sauce and the Italian seasoning. Remove from heat.
04 - Fill each tortilla with about 1/8th of the sausage mixture and some of the shredded mozzarella (use about 8 ounces total for the filling). Roll up each tortilla and place seam-side down in the prepared baking dish.
05 - Pour the remaining pizza sauce over the top of the rolled tortillas and spread it evenly. Sprinkle the remaining mozzarella cheese over the top, then add the mini pepperonis and a little extra Italian seasoning.
06 - Bake uncovered for 10 to 12 minutes, or until the cheese is melted and bubbly.
07 - Serve hot and enjoy this fun pizza-enchilada mashup! Everyone will love these.

# Notes:

01 - Use freshly shredded mozzarella for the best melting - pre-shredded can be grainy.
02 - You can customize the toppings just like pizza - add mushrooms, jalapeños, or whatever you like!
03 - Make sure to place the tortillas seam-side down so they don't unroll while baking.
04 - This is perfect for game day, parties, or an easy weeknight dinner.
05 - Leftovers reheat great in the oven or microwave.
