Popeyes Cajun Fries (Print Version)

# Ingredients:

01 - 2 large russet potatoes, peeled and rinsed.
02 - 2 quarts vegetable oil (or canola oil).
03 - 1 teaspoon smoked paprika.
04 - 1/2 teaspoon garlic powder.
05 - 1/4 teaspoon dried oregano.
06 - 1/2 teaspoon kosher salt.
07 - 1/4 teaspoon freshly ground black pepper.

# Instructions:

01 - Cut potatoes into 1/2-inch thick sticks. Soak in cold water for 1 hour or overnight.
02 - Rinse potatoes, transfer to paper towels, pat dry and let rest 5 minutes.
03 - Combine paprika, garlic powder, oregano, salt and pepper in a small bowl.
04 - Heat oil to 300ºF. Fry potatoes in batches for 4-5 minutes. Remove to paper towels.
05 - Increase heat to 400ºF. Fry again 2-3 minutes until golden brown and crispy.
06 - Sprinkle with Cajun seasoning mix immediately after removing from oil.

# Notes:

01 - Soak potatoes to remove starch for crispier fries.
02 - Double frying creates extra crispy texture.
03 - Best served immediately while hot and crispy.
