Cut potatoes into 1/2-inch thick sticks. Soak in cold water for 1 hour or overnight.

Rinse potatoes, transfer to paper towels, pat dry and let rest 5 minutes.

Combine paprika, garlic powder, oregano, salt and pepper in a small bowl.

Heat oil to 300ºF. Fry potatoes in batches for 4-5 minutes. Remove to paper towels.

Increase heat to 400ºF. Fry again 2-3 minutes until golden brown and crispy.

Sprinkle with Cajun seasoning mix immediately after removing from oil.
