Puff Pastry Croque Madame (Print Version)

# Ingredients:

01 - 2 sheets puff pastry, thawed.
02 - 1 egg plus 1 teaspoon water (for egg wash).
03 - 6 ounces Gruyere cheese, shredded.
04 - 8 slices Black Forest ham.
05 - 8 eggs.
06 - Kosher salt.
07 - Ground black pepper.
08 - Chives, chopped (for garnish).

# Instructions:

01 - Heat oven to 400°F.
02 - Roll each pastry sheet into a square and cut into 4 squares each.
03 - Place squares on parchment-lined baking sheets. Poke holes in center with fork.
04 - Brush with egg wash and sprinkle with salt.
05 - Place ham on pastry squares.
06 - Sprinkle cheese in a circle, leaving center space for egg.
07 - Bake 10-15 minutes until edges start puffing.
08 - Make a small well in center with back of spoon.
09 - Crack an egg into each well. Season eggs with salt and pepper.
10 - Bake another 10-15 minutes until whites set.
11 - Garnish with chives and serve hot.

# Notes:

01 - Watch pastry closely as cooking time varies based on how cold your pastry starts. The pastry should be thawed but still cool for best results.
