Quick & Easy Shepherd's Pie (Print Version)

# Ingredients:

→ For the mashed potato topping

01 - ½ (13 oz) box instant mashed potatoes
02 - Butter, milk, and salt (as required by potato package directions)

→ For the meat and vegetable filling

03 - 1 pound ground beef
04 - 1 (12 oz) bag frozen mixed vegetables
05 - 1 (10.75 oz) can tomato soup
06 - 1 (1.5 oz) packet beef stew seasoning mix
07 - ½ cup water
08 - 1-2 cups shredded cheddar cheese

# Instructions:

01 - Preheat oven to 400°F. Prepare the mashed potatoes according to package directions using about half of a 13 oz box (or more if you prefer extra potatoes).
02 - In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease from the pan.
03 - Add the tomato soup, frozen mixed vegetables, beef stew seasoning packet, and water to the cooked beef. Stir well and simmer on low heat for 5-10 minutes.
04 - Spread the ground beef mixture evenly in the bottom of a greased 9x13 inch baking dish. Top with the prepared mashed potatoes, spreading them evenly over the meat.
05 - Sprinkle the shredded cheddar cheese over the mashed potatoes. Bake uncovered for about 30 minutes, or until the cheese starts to brown on top.
06 - Let the shepherd's pie cool for 5-10 minutes before serving to help it set up and make cutting easier.

# Notes:

01 - You can use any type of mashed potatoes - boxed, homemade, leftover, or store-bought from the deli section.
02 - If making mashed potatoes from scratch, you'll need about 4 large russet potatoes.
03 - Add a chopped sautéed onion to the ground beef for extra flavor if your family enjoys onions.
04 - This recipe is perfect for meal prep and can be made ahead of time, then reheated when needed.
