Potsticker Soup (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil.
02 - 8 ounces shiitake mushrooms, thinly sliced.
03 - 2 tablespoons fresh ginger, grated or minced.
04 - 4 cloves garlic, pressed or minced.
05 - 6 cups vegetable broth.
06 - 2 tablespoons soy sauce.
07 - 16 to 20 ounces frozen potstickers.
08 - 5 scallions, thinly sliced.
09 - 3 baby bok choy, trimmed and separated.
10 - 2 teaspoons toasted sesame oil.
11 - Black pepper to taste.

# Instructions:

01 - Heat 1 tablespoon oil and cook mushrooms until browned. Add remaining oil, garlic and ginger, cook 1-2 minutes.
02 - Add broth and soy sauce. Bring to boil.
03 - Add potstickers, half the scallions, and bok choy. Cook 3-4 minutes until potstickers are done.
04 - Stir in sesame oil and pepper. Adjust seasoning with extra soy sauce if needed.
05 - Garnish with remaining scallions and optional toppings.

# Notes:

01 - Can customize with different dumplings and vegetables.
02 - Optional toppings include chili crisp, sesame seeds, furikake, fried garlic.
