Mini Red Cheesecakes (Print Version)

# Ingredients:

01 - 1 1/2 cups Oreo cookie crumbs.
02 - 6 tablespoons unsalted butter, melted.
03 - 8 oz cream cheese, softened.
04 - 1/2 cup sugar.
05 - 1 large egg.
06 - 1 teaspoon vanilla extract.
07 - 2 tablespoons red velvet cake mix.
08 - Red food coloring (optional).
09 - Cream cheese frosting.
10 - White chocolate shavings.
11 - Sprinkles.

# Instructions:

01 - Mix Oreo crumbs and melted butter. Press into paper-lined mini muffin tins.
02 - Beat cream cheese and sugar until smooth. Add egg and vanilla, mix well.
03 - Fold in red velvet cake mix and food coloring if using.
04 - Fill crusts almost full with mixture.
05 - Bake at 350°F for 15-18 minutes until edges set but center slightly jiggly.
06 - Cool in pan, then transfer to wire rack.
07 - Chill at least 2 hours or overnight.
08 - Top with frosting, chocolate shavings, and sprinkles.

01 - Can use graham crackers instead of Oreos.
02 - Add cocoa powder for stronger flavor.
03 - Make up to 2 days ahead.
04 - Let ingredients reach room temp before mixing.
