Roast Beef & Cheddar Sliders (Print Version)

# Ingredients:

→ Beef

01 - 1 1/2 pounds shaved rare roast beef
02 - 2 cups beef broth
03 - 3 tablespoons Worcestershire sauce

→ Cheese Sauce

04 - 2 tablespoons butter
05 - 2 tablespoons all-purpose flour
06 - 1 cup whole milk
07 - 1/4 teaspoon kosher salt
08 - 1/4 teaspoon white pepper
09 - 1/4 teaspoon dry mustard
10 - Pinch of nutmeg
11 - 1 1/2 cups shredded sharp white cheddar

→ Assembly

12 - 12 slider rolls
13 - 2 tablespoons melted butter
14 - 1-2 tablespoons everything bagel seasoning
15 - Arby's sauce

# Instructions:

01 - Combine beef broth and Worcestershire sauce. Bring meat to room temperature.
02 - Make roux with butter and flour, add hot milk, seasonings, and cheese until smooth.
03 - Heat broth mixture to boiling. Add beef and strain immediately.
04 - Layer roll bottoms with Arby's sauce, beef, and cheese sauce. Add tops and brush with butter and seasoning.
05 - Cover and bake at 350°F for 15 minutes, then uncovered 10 minutes. Broil briefly and brush with remaining butter.

01 - Can use store-bought Arby's sauce
02 - Serve with extra sauces
03 - Best served hot
