# Ingredients:

02 - 1 large or 2 small sweet potatoes, sliced into ¼-inch rounds.
03 - 4 oz goat cheese, softened for whipping.
04 - 2 tbsp milk, your choice for creaminess.
05 - 1 tsp fresh rosemary, finely chopped for fragrance.
06 - Kosher salt, to taste.
07 - Black pepper, to taste.
08 - ¼ cup toasted pecans, chopped for crunch.
09 - ½ cup dried cranberries, for sweetness.
10 - Honey, for drizzling.

# Instructions:

01 - Preheat oven to 425°F (220°C) and lightly spray a rimmed baking sheet with cooking oil.
02 - Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
03 - Roast for 10 minutes, then flip the rounds and bake for another 8-12 minutes until tender and caramelized.
04 - Whip goat cheese with milk, rosemary, salt, and pepper until fluffy.
05 - Top each roasted sweet potato round with ½ tsp of whipped goat cheese. Add chopped pecans, dried cranberries, and drizzle with honey.
06 - Serve warm or at room temperature as an appetizer or side dish.
