Bring a large pot of salted water to a boil. Add noodles and cook until just tender, following package guidance. Drain and set aside.

In a large skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add mushrooms and cook until caramelized, about 5-7 minutes. Remove and set aside.

Using the same skillet, heat the remaining sesame oil. Add garlic and ginger, cooking until aromatic, about 1-2 minutes.

Stir in soy sauce, rice vinegar, and honey/maple syrup. Let simmer for another minute.

Add the cooked noodles to the skillet and toss to coat them in the sauce.

Serve the noodles topped with caramelized mushrooms, garnished with green onions and sesame seeds.
