Sausage and Spinach Frittata (Print Version)

# Ingredients:

01 - 5 eggs.
02 - 2 sausage links, about 6oz chopped.
03 - 1 cup spinach, chopped.
04 - ½ cup onion, chopped.
05 - ½ cup red bell pepper, chopped.
06 - ⅓ cup heavy whipping cream.
07 - 2 tablespoon olive oil.
08 - ½ cup cheddar cheese.
09 - ½ teaspoon salt.
10 - ½ teaspoon black pepper.
11 - ½ teaspoon cayenne pepper.
12 - ½ teaspoon thyme.

# Instructions:

01 - Heat oven to 350°F.
02 - Heat olive oil in skillet. Add onions, then red pepper and sausage with pinch of salt and pepper. Cook 5 minutes.
03 - Whisk eggs, cream, cheese, salt, thyme, cayenne, and black pepper in bowl.
04 - Stir spinach into skillet until just wilted, about 1 minute.
05 - Pour egg mixture into skillet and stir once. Cook until edges start turning yellow.
06 - Transfer skillet to middle/lower oven rack. Bake 7-10 minutes until center is slightly jiggly.
07 - Let sit 5 minutes before serving to finish cooking.

# Notes:

01 - Don't overstir eggs when combining - just a few big stirs.
02 - Use middle or lower oven rack to prevent burning.
03 - Remove when center is slightly jiggly as it continues cooking while resting.
04 - Can use almond or coconut milk for dairy-free option.
