Sausage Tortellini Soup (Print Version)

# Ingredients:

01 - 1 pound mild Italian sausage.
02 - 1 medium yellow onion, chopped.
03 - 6 garlic cloves, minced.
04 - 1 quart chicken stock.
05 - 14 ounces crushed tomatoes.
06 - 2 tablespoons tomato paste.
07 - 1 teaspoon sea salt.
08 - 1 bunch curly kale, torn.
09 - 10 ounces fresh tortellini.
10 - 1 cup heavy cream.
11 - Parmesan cheese for serving.
12 - ΒΌ teaspoon red pepper flakes.

# Instructions:

01 - Cook sausage, onions, and garlic until meat browns and onions soften, about 5 minutes. Drain excess fat.
02 - Add stock, tomatoes, paste and salt. Boil then simmer 15 minutes.
03 - Add kale, tortellini, cream. Cook 3-5 minutes until pasta tender.
04 - Top with Parmesan and red pepper flakes if desired.

# Notes:

01 - Can use frozen tortellini.
02 - Adjust spice with red pepper.
