Shrimp Saganaki (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - ¼ cup shallot, chopped
03 - 3 cloves garlic, chopped

→ Main Components

04 - 2 cups cherry tomatoes, halved
05 - ⅓ cup kalamata olives, halved
06 - 1¼ pounds jumbo shrimp, peeled and deveined
07 - 6 ounces feta cheese, cubed small

→ Seasonings & Aromatics

08 - 1 lemon, zest and juice
09 - ¼ cup fresh dill, finely chopped

# Instructions:

01 - Heat olive oil in deep skillet. Cook shallot and garlic until fragrant, 2-3 minutes
02 - Add tomatoes and cook until burst, 5-6 minutes. Add olives and water, cook until thickened, 2-3 minutes
03 - Add shrimp to tomato mixture, cover and cook until pink, about 3 minutes
04 - Stir in lemon zest, juice, and dill. Top with feta cheese

# Notes:

01 - Serve with orzo or pita bread
02 - Can add chickpeas for extra protein
