Shrimp Salad Stuffed Avocados (Print Version)

# Ingredients:

01 - 4 ripe avocados.
02 - 1 pound shrimp, peeled and deveined.
03 - 2 lemons.
04 - 4-5 sprigs fresh parsley.
05 - 4-5 sprigs fresh dill.
06 - 4 garlic cloves.
07 - 1/2 cup mayonnaise.
08 - 3 tablespoons sour cream.
09 - 1/3 cup celery, diced.
10 - 1/3 cup cucumber, diced.
11 - 1/4 cup red onion, diced.
12 - 2 tablespoons fresh chives, minced.
13 - 1/2 teaspoon sugar.
14 - Salt and pepper to taste.
15 - Chili powder optional.

# Instructions:

01 - Bring water to boil with lemon, garlic, herbs and salt. Add cleaned shrimp and cook 1-3 minutes until pink. Remove and cool.
02 - Dice cooled shrimp. Mix with mayo, sour cream, celery, cucumber, onion, chives, lemon zest, juice, sugar and seasonings.
03 - Halve and pit avocados. Remove flesh carefully keeping shape. Slice bottom to help stand. Rub with lemon and season.
04 - Fill each avocado half with about 1/3 cup shrimp salad. Optional: sprinkle with chili powder.

# Notes:

01 - Cut avocados just before serving to prevent browning.
02 - Leftover avocados can be used for guacamole.
