Add the halved small potatoes to the bottom of your slow cooker bowl. Sprinkle half of the Cajun seasoning evenly over the potatoes, then dot with pats of butter. This creates a rich, creamy base as they cook.

Place the trimmed green beans and diced onion in an even layer on top of the seasoned potatoes. Sprinkle the remaining Cajun seasoning and black pepper evenly over this layer so everything gets seasoned nicely.

Arrange the sliced smoked sausage coins evenly over the green beans and onions. As it cooks, the sausage flavor will infuse everything below it.

Cover the slow cooker and cook on HIGH for 4 hours or LOW for 6 hours. Stir gently every hour to combine the flavors and prevent anything from sticking. The potatoes and beans should become tender and everything should be smothered in buttery Cajun goodness.
