Swamp Potatoes with Sausage (Print Version)

# Ingredients:

→ For the Vegetables

01 - 2 lbs fresh green beans, ends trimmed
02 - 1 1/2 lbs small potatoes, halved lengthwise
03 - 1 large yellow onion, peeled and diced

→ For the Meat

04 - 14 to 16 oz smoked sausage, sliced into coins

→ For Seasoning and Fat

05 - 1 stick unsalted butter, sliced into pats
06 - 1 tablespoon Cajun seasoning
07 - 1/2 teaspoon black pepper (optional but recommended)

# Instructions:

01 - Add the halved small potatoes to the bottom of your slow cooker bowl. Sprinkle half of the Cajun seasoning evenly over the potatoes, then dot with pats of butter. This creates a rich, creamy base as they cook.
02 - Place the trimmed green beans and diced onion in an even layer on top of the seasoned potatoes. Sprinkle the remaining Cajun seasoning and black pepper evenly over this layer so everything gets seasoned nicely.
03 - Arrange the sliced smoked sausage coins evenly over the green beans and onions. As it cooks, the sausage flavor will infuse everything below it.
04 - Cover the slow cooker and cook on HIGH for 4 hours or LOW for 6 hours. Stir gently every hour to combine the flavors and prevent anything from sticking. The potatoes and beans should become tender and everything should be smothered in buttery Cajun goodness.
05 - After cooking, give everything a good stir and serve warm. This works great as a hearty dinner on its own or as a flavorful side dish!

# Notes:

01 - Do NOT use canned green beans - they'll get mushy during the long cooking time. Fresh beans hold their texture much better.
02 - You can swap the smoked sausage for diced ham if you prefer.
03 - Don't add any extra liquid! The vegetables and sausage release plenty of moisture as they cook.
04 - Stirring every hour helps blend the flavors and keeps everything from sticking.
