01 -
In a small bowl, stir together the mayonnaise, ketchup, mustard, pickle brine, smoked paprika and garlic powder. Cover and refrigerate until ready to use.
02 -
Dice the onion, shred the lettuce and slice the pickles if needed. Set them near the stove for quick assembly later.
03 -
Preheat a heavy skillet or griddle over medium-high heat until it is very hot, hot enough that a drop of water sizzles instantly on contact.
04 -
Divide the beef into 8 equal balls, about 2 oz each. Place each ball on the hot pan and immediately smash it flat with a sturdy spatula. Season with salt and pepper and cook for about 2 minutes, until deeply browned and crisp at the edges.
05 -
Flip each patty, lay a slice of cheese on top, and cook for about 1 more minute, until the cheese is melted and the beef is cooked through to a safe internal temperature.
06 -
Warm each tortilla on the same hot pan for 20 to 30 seconds per side until pliable and lightly toasted. Place a cheesy patty on each tortilla, spoon over the sauce, and top with onion, lettuce and pickles. Fold and serve immediately.
