Soft & Chewy Gingerbread Men Cookies (Print Version)

# Ingredients:

01 - 3 1/4 cups all-purpose flour.
02 - 1 1/2 tablespoons ground ginger.
03 - 1 1/2 teaspoons cinnamon.
04 - 1/4 teaspoon ground cloves.
05 - 1/4 teaspoon nutmeg.
06 - 1 teaspoon baking soda.
07 - 1/2 teaspoon salt.
08 - 3/4 cup unsalted butter, softened.
09 - 3/4 cup light brown sugar, packed.
10 - 1/2 cup molasses.
11 - 1 large egg, room temperature.
12 - 2 1/2 cups powdered sugar.
13 - 4 tablespoons warm water.
14 - 2 tablespoons meringue powder.
15 - 1/2 teaspoon cream of tartar.

# Instructions:

01 - Whisk flour, spices, baking soda and salt.
02 - Beat butter, brown sugar and molasses until fluffy. Add egg. Gradually mix in dry ingredients until just combined.
03 - Divide dough, wrap in plastic, and refrigerate 1 hour or overnight.
04 - Roll dough to 1/4 inch on floured surface. Cut out shapes and place on lined baking sheets.
05 - Bake at 350°F for 9-10 minutes. Cool 5 minutes on sheets before moving to rack.
06 - Beat all icing ingredients until glossy, 1-3 minutes. Keep covered until use.

# Notes:

01 - Dough can be made ahead and chilled overnight.
02 - Add flour when rolling if dough is sticky.
03 - Cool completely before decorating.
