Southern Candied Yams (Print Version)

# Ingredients:

01 - 2 lbs sweet potatoes.
02 - 3/4 cup dark or light brown sugar.
03 - 1 cup white sugar.
04 - 2 tsp cinnamon.
05 - 1 tsp nutmeg.
06 - 1/4 tsp ginger.
07 - 1/4 tsp salt.
08 - 2 tbsp vanilla extract.
09 - 1 stick butter.
10 - 4 tbsp frozen orange juice concentrate, thawed.

# Instructions:

01 - Scrub, peel, and slice yams into 1/2 inch rounds.
02 - Combine all ingredients in medium pot over medium-high heat.
03 - Stir to coat yams in sugar-butter mixture.
04 - Bring to boil, then cover and simmer for 50 minutes until tender.
05 - Uncover, raise to medium heat.
06 - Boil 10 minutes, stirring occasionally, until syrup thickens.
07 - Keep warm in oven until serving.

# Notes:

01 - Can make 3 days ahead.
02 - Use smaller yams for easier prep.
03 - Adjust sugar to taste.
04 - Handle gently when done to prevent breaking.
