Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy, then gently fold in the diced strawberries

On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick. Cut into heart shapes using a heart-shaped cookie cutter

Place a spoonful of the cream cheese filling on half of the heart cutouts, leaving some space around the edges. Top with another heart cutout and press the edges to seal. Use a fork to crimp the edges for an extra seal

Beat the egg in a small bowl and brush it over the tops of the heart puffs. Sprinkle with granulated sugar for a sweet finish

Place the heart puffs on the prepared baking sheet and bake for 15-20 minutes, or until golden brown. Allow to cool slightly before serving
